Ice Cream Sandwiches

Makes 6 ice cream sandwiches


  • 12 Reko Pizzelle Cookies (flavor of choice)
  • 28 oz container vanilla ice cream or flavor of choice, softened
  • Assorted sprinkles and chocolate chips, optional


  1. Scoop ½ cup of softened ice cream onto the center of 6 Reko Pizzelle cookies
  2. Top sandwiches with remaining 6 cookies
  3. Press down to spread ice cream between cookies, roll into the toppings as desired
  4. Place sandwiches onto a baking sheet and freeze for 30 minutes before serving
