Ingredients:
- 6 Reko Dark Chocolate Pizzelle cookies
- 1 pint cookies & cream ice cream (softened slightly for easy scooping)
- ¼ cup mini chocolate chips
Directions:
- To soften the ice cream, let sit at room temperature for 5–10 minutes until slightly soft.
- To form the pizzelle cannoli, warm each cookie very briefly (5–15 seconds) in the microwave until pliable, then quickly wrap it around a cannoli mold or the handle of a wooden spoon to form a tube. Hold in place for 10–15 seconds until it sets. Repeat with all pizzelle, one at a time.
- Fill the cannoli by piping softened ice cream into the pizzelle tubes.
Gently press mini chocolate chips into each end, then place filled cannoli in the freezer for 30 minutes before serving.
